This week has been a really busy one for me ! Spring days are always like this ! So many happenings and so much chores. The one thing I don't like about Spring is weed picking ! With one light shower comes a truck load of weeds.But this time ,it is so warm for a Spring here ! Isn't mother nature acting so weird this year ? I feel so. I really hope we get some nice rain showers soon,though I'll have to break my back to get rid of all the weeds
Some weeds have really beautiful flowers and how I wish they were just garden plants ! Or maybe I can pretend that they are ! I was picking weeds in the yard and lil M came to "help" me. He was furious when I picked his favorite dandelions and kept on telling me how cute and pretty they are.
After the chores, when we get back inside the house,he would love to have a little treat like these cookies ! Yes, he deserves it. If you have some over ripe bananas in your pantry, make these cookies instead of banana bread for a change. I love banana bread, but now I must say, I love these cookies as much as I love my banana bread. So from now on, when I have some left over bananas,it will be tough choice.
We all loved this cookies and they disappeared in couple of days .I have already told you several times how picky is lil M when it comes to baked goods. He absolutely love these cookies and he had them for breakfast,desert,snack and whatsoever reason he could find.My daughter is picky too,but she likes everything that has chocolate in it, except for Oreo cookies !
After baking something,I wait biting my nails, for the response from both my kids. If they love it I have a winner ! If you or your loved ones love banana bread and chocolates, this is the cookies for you. Go put on your apron, get your oven warmed up and win their heart with these cookies !
Preparation time: 10 min
Cooking time: 10 minutes
Yield: ~ 30 cookies
Ingredients:
White whole wheat flour- 1/2 cup
All purpose flour- 1/2 cup
Rolled oats- 3/4 cup
Ground cinnamon- 3/4 tsp
Baking powder- 1/2 tsp
Baking soda- 1/2 tsp
Salt- a pinch
Butter,softened- 1/2 cup
Light Brown sugar- 1/2 cup
Mashed banana- 1/2 cup
Egg- 1
Pure Vanilla extract- 1 tsp
Chopped walnuts (optional)- 1/2 cup
Chocolate chips- 3/4 cup
Method:
1.Preheat oven at 350 degree F. Line 2 cookie sheets with parchment paper.
2.Combine flours,oats,cinnamon, baking powder and baking soda and salt in a bowl and keep aside.
3.Beat the butter and sugar until light and fluffy. Beat in egg, banana and vanilla.
4.Add the flour mixture into this wet mixture and mix until blended.
5.Drop 1 tbsp of dough on cookie sheet,2 inches apart.
6.Bake for 10-12 minutes or until cookies are golden.
7. Let cool in the cookie sheets for a few minutes before cooling on a wire rack.
8.Store in an airtight container.
Notes:
1.The original recipe calls for all purpose flour, I substituted half of it with whole wheat flour.
2.Cinnamon in the original recipe is 1/2 tsp. I added more, since I like cinnamon flavor.
