Mango Rice with Cucumber Mint Raita

How are you all? Hope you had a great week end ! We had a fabulous week end with lots of good food,good company, fun and laughter.Food tastes great when you share it with somebody,don't you think?





Today I am sharing two simple recipes with you and I wonder, why I didn't do this post before? Last month for Ugadi, we had a fun get together in our friend's place and definitely this was the main entree."Mavinakayi Chitranna" as they call in Karnataka or "Mamidikaya pulihora" as they call in Andhra,this mango rice will be loved by one and all !


You will see, how easy to whip up this tongue tickling rice, especially if you have some leftover rice . This is also a perfect dish for your lunch box.My kids love all rice that has some color in it and this one is a favorite


The raita is also very simple,a perfect dip for summer. Yogurt and mint together has a cooling and soothing effect on your body.


FOR MANGO RICE :

Ingredients:

Oil- 2 Tbsp
Peanuts- 3 Tbsp
Channa dal- 1 Tbsp
Mustard seeds- 1/4 tsp
Green chilies,split lengthwise- 3-4
Curry leaves- 1 sprig
Raw mango- 1, peeled and grated
Turmeric- a generous pinch
Asafoetida- a small pinch
Salt- to taste
Cooked rice- 2 cups

Method:

1.Heat oil in a non stick frying pan.Fry the peanuts and take them out when they are done and set aside.
2.Add the chana dal and fry it till they start turning color to light brown.Add mustard seeds and let them splutter.
3.Throw in green chilies and saute well,followed by curry leaves.
4.Add grated mango and saute for a few minutes on medium low heat, till it is cooked.
5.Add turmeric, asafoetida and salt. Mix well.
6.Spoon in the cooked rice. Mix everything well. Mix in fried peanuts and serve warm with cucumber raita.


FOR CUCUMBER MINT RAITA:

Ingredients:

Cucumber- 1,peeled and chopped fine
Mint-a small bunch
Cumin powder- 1/4 tsp
Plain Yogurt,preferably Greek or hung yogurt- 1 cup
Salt

Method:

1.Grind a few leaves of mint, without adding any water. If you feel like adding any liquid, add a spoon of yogurt while grinding.
2.Mix in this mint in yogurt along with slat.If you feel like adding more mint,this is the time. Or if it is too minty,add a little more yogurt.
3.Add the chopped cucumber,after gently squeezing between your fingers, to take out excess water.(if you prefer your raita to be runny, you can use normal yogurt and you don't have to squeeze the cucumber)
4.Chill and serve with rice or roti of your choice.

    i don get raw mango anywhere nearby n it sucks. the mint raita is always a winner.

  19. Its a perfectly colorful and nutritious mango rice recipe you've shared. I will definitely make it and see. Adding mint and cucumber to raita is also something I like esp during summer. Do post more of such yummy, easy to make recipes, pls.
