As for myself I had a wonderful Christmas eve and a peaceful Christmas day. Everybody was super excited about the snow! Though it was really cold, the sun was shining bright which encouraged us to get out for a hike in the mountains.
This recipe for the cookie is real easy. You can make it in half-hour flat, and reap all the compliments. In fact, this holiday season I have been super busy with work, kids and a party at home, and yet I managed to make enough cookies for friends and family. Hopefully that gives you enough encouragement to try it yourself.
Some other reasons I can think of to nudge you into trying these cookies are they have nuts, and it is eggless. So if you prefer cookies without eggs and love nuts, this one is for you. Go on then, put on your “baking apron” and make these for someone special.

Preparation time: 15 min
Baking time: 15 min
Yield: 2 dozen small cookies
Recipe from : Brown Eyed Baker
Ingredients:
Unsalted butter- 1/2 cup
Light brown sugar- 1/2 cup
Pure vanilla extract- 1 1/2 tsp
Salt- a pinch
All purpose flour- 1 cup
Pecan, chopped coarsely- 1 cup
Method:
1.Preheat oven at 350 degree F.Line a large baking sheet with parchment paper.
2.Beat butter and sugar in a mixing bowl, until light and fluffy.
3.Add vanilla and salt mix well.
4.Slowly add flour and beat at slow speed. Fold in pecan pieces.
5.make one inch balls out of the dough and place an inch apart on baking sheet.Flatten with the bottom of a glass.
6.bake for 15-16 min and cool on a wire rack.Store in an airtight container.
